Broccoli and Squash Medley

A colorful side dish with a nice tang to it.

Broccoli and Squash Medley

1 1/2 lbs. Frozen broccoli
2 cups Butternut squash -- chopped
1/2 cup Orange juice
1/4 cup Butter
1/2 cup Craisins
1/2 cup Pecans -- chopped
1 Tbsp. Grated orange peel
1 tsp. Salt

Steam broccoli; set aside. In a large skillet, cook squash in orange juice until tender. Add butter and stir until melted. Add all ingredients and toss to coat.

  1. I still make this one quite a bit, though I usually leave out the squash (too hard to find or remember to buy when I'm at the store). I saute fresh chopped broccoli in some orange juice, then add a handful of craisins and chopped pecans after a few minutes. Super quick and delicious!

    1. That works too! We used to be able to get frozen butternut squash, which would make it super fast and easy. Now sometimes we buy two of them and freeze some.
